Grease traps are designed to intercept grease, oil, and sometimes solids from wastewater generated in kitchen environments.
The grease, oil and solids must be periodically removed through a pumping and cleaning process.
The lighter greases and oils float in the tank to form a “scum” layer while the solids will settle to the bottom and the relatively grease-free water is then fed to the sewer system.
The main line entering the tank and leaving the tank will need to cleaned periodically as well.
- When warmer greases and oils encounter the cooler sewer pipes, they can solidify on the walls of the pipe which leads to build up and eventually blockages and back up.

These pits are typically constructed of a tank with holds in the sides and without a bottom. Sewage should be removed regularly to allow the biomat, which will have formed along the sidewalls, to rest.
